Here are the ingredients. These might seem a lot but I’m telling you, the end will definitely justify the means!

3 tablespoon Olive Oil
2 Cloves Garlic, minced
1 teaspoon chopped Fresh Thyme
1 teaspoon chopped Fresh Sage
1 teaspoon chopped Fresh Rosemary
2 Small Eggplant, halved lengthwise
2 Zucchini, halved lengthwise
2 Yellow Squash, halved lengthwise
4 Red Onion, sliced 1/4 to 1/2 inch thick
1 Red Bell Pepper, seeded and quartered
1 Yellow Bell Pepper, seeded and quartered
3 cups Broccoli Flowerets
Fresh Ground Black Pepper

After looking at a long list of ingredients, don’t fret. The preparation is actually so easy and quick that the time you spent looking for the ingredients will be compensated by the preparation.

The night before the grilling, combine olive oil, garlic, thyme, sage and rosemary in a small bowl. For the veggies, place them in a baking pan and brush them with the oil mixture you have just prepared. When done, marinate it for at least two hours of you don’t have time to spare. If you have the time, an overnight marinade would be better. This will ensure that the herb flavors will infuse well into the veggies.

Okay, let’s fast forward time. Start preheating the grill just for medium heat. Grill the vegetables directly over medium heat. When done, season with salt and pepper. Check for tenderness.
